I connected a Kawai ES8 piano with an iPad Pro (second to last model). Through the dedicated Yamaha app, I selected Bluetooth and then tried with Ravenscroft, Garageband, Korg Module. The latency is terrible, you can't play anything. Bluetooth MIDI has a long way to go before it's usable. Maybe it's better on PC/Mac OS, but on iOS it's not feasible.
